Winnipeg is getting quite a name for itself and I am NOT referring to a recent McLean’s article. The Toronto Star and the New York Times cite our fair city as the coolest place to dine.  They are referring to Raw Almond, the pop-up restaurant which appears each year on the frozen river at the Forks.

The diners for the evening accumulated outside and provided us all with an opportunity to view the “pop up”.  If you intend to go next year, as this year’s dinner sittings are completely sold out- check the forecast. The evening we dined, was a balmy one and we were absolutely toasty inside the fascinating architectural “tent”. In fact, one person at our table who was seated right in front of a warm air vent was sleeveless!

Three communal tables are hosted by three local chefs each evening.  Chef Mitchell of Deseo’s Bistro was the artiste for Table #3 where we sat.

We began with a Foie Gras torchon which melted in our mouths like the creamiest butter.

Next up was a mini steamed bun that contained an escalope of fried chicken enhanced by an oyster mayonnaise and caviar.

Beef tartare was served with cardamom yoghurt and warm Ethiopian injera. Each course provided a whole spectrum of flavours concocted by our brilliant young chef. Fellow diners must have been thinking, how is he going to top this course? And then he would.

Crispy veal sweetbreads and Albacore tuna in a butter chicken sauce arrived next. We thought it impossible that we were eating fish because no piece required chewing; it simply melted on our tongues.

The beef short rib was absolutely sensational. Chef Mitchell professed to have Ukrainian roots and the entrée was his homage to both Beef & Barley Soup and Borscht. The exquisite beef came away perfectly with the tongs of a fork so that it could be speared with the barley risotto that it was perched upon and the toasted barley that it had been crowned with. The best part was swirling a forkful around in the divine borscht influenced elements of carrot puree, crème fraiche, fresh dill and jewels of pickled beet.

We were not done yet. Mitchell also confessed to a sweet tooth and treated us to his slow-cooked chocolate espresso pudding made crunchy with a sprinkling of crispy rice and toasted hazelnuts, made salty by a swirl of salted caramel sauce and made silky by a drizzling of olive oil.

The food was astonishing in itself and made more so, when you got a glimpse of the three chefs and their teams, together in the make-shift kitchen.

The other two tables were still finishing off their dessert course as we made our way back through the Forks and home.

Even if the food had not been top notch, the entire experience is such an adventure, prompting suburbanites like us to enjoy the heart of our city at the Forks. The pop up structure is an architectural delight as were the other warming huts that we had a chance to poke our heads into. Skaters were enjoying the balmy weather and more than once, we wondered what city we were in.

Scotia Amex Cross Canada Meet Up

I am often sent invitations to events where the details are on the mysterious side.  Such was the case, with the recent event hosted by Scotiabank.  There was no mention that food would be offered and yet I should have known with Deseo Bistro being the venue.  With D out of town and my wanting to get caught up on some culinary visits, I asked Sister #3 to join me for the evening.  Our first destination was a new restaurant in the neighbourhood for one writing assignment and then desert at another place for a different writing commitment.  By the time we arrived at Deseo, we had already enjoyed a wonderful evening filled with delightful tastes and good fun.  Little did we know that there was considerably more of both to come.

The cross Canada bloggers meet up was to engage us with a new travel rewards card from the Scotia Amex folks.  I am definitely going to explore applying for the card.  The food theme for the evening was regional tastes from all the participating provinces.

First up was BC smoked salmon topped with creme fresh and caviar (although it looks as if the caviar was not present on this later offering).  The salty smokiness and richness of the salmon was beautifully offset by the buttery cream and caviar.  The latter was lightly applied which was appreciated because although I enjoy the intense taste of caviar, too much could have overpowered the star of the appetizer-the salmon.

Lobster croquettes topped with blueberries, representing Nova Scotia came around next.  I adore the taste of lobster and found that the fieriness of the ingredients which were intended to enhance the sweet shellfish, may have actual masked the delicate taste.  I will happily eat lobster at every opportunity and this is certainly not a criticism, just my preference.

The Alberta beef tenderloin took on a Korean influence with a topping reminiscent of kim chee.  The treat took two bites to eat and was wonderfully messy.

Two delicacies were appointed from Quebec-poutine and foie gras.  Fingerling potatoes contained a scoop of delicate duck liver.  Oh my!

Representing Ontario: baby cobs of corn were wrapped in prosciutto and then grilled.  There were so much fun and equally delicious.

From Manitoba: Omgoodness-the pork belly was sublime!  The strip of natural fat stayed firm until it entered your mouth and then it just melted way into sheer loveliness.  Chokecherries provided that salty/sweet taste that I constantly crave.  Heaven, I’m in heaven…..

We were hosted with other lovely treats besides food, including a cocktail dubbed the Lumberjack which was like a whiskey sour made with a maple infusion.  One lucky attendee walked away with a $400. Travel Voucher!

Deseo at Christmas Time

This was one of those evenings where you arrive at the appointed hour and in what seemed like moments later, it is time to go.  The time was precious and wonderfully spent with old friends to celebrate the joys of the past year with optimism for the one ahead.

The main floor of Deseo Bistro was jammed packed with merrymakers doing exactly what we were doing and the room felt alive with the energy of fellow Winnipeggers.  Our server was cordial, efficient and very attentive, even though he thought he had not been.  He came and apologised to us at one point for needing to focus on another party.  Truth was, we did not even notice.

The evening started with Deseo’s own versions of Bloody Caesars which had a wonderful kick and warmed up the evening.  Every couple decide to share a small plate including the Crunch Salad which I had tasted on other occasions and totally regretted not doing so again.  The crunch is contributed by celery, edamame, pistachios, peanuts, crispy onions and distinctively by jicama, a taste which I can’t get enough of especially when it is enhanced by lime and cilantro, which this was in abundance.  It also includes mojito vinny-huh?  I have no idea what that is.

D and I shared the Black Truffled Gnocchi which was an inventive combination of crisp black quinoa, black garlic and black boar bacon.  The tones were dark and earthy and you could taste the forrest.

I then went ahead and ordered another pasta for my large plate which was a seafood spaghetti topped with a poached egg and D chose the Monk-fish.

 

Mine was rich and creamy and D’s was light, so tastes from each plate were a satisfying combination.  Both were from their special features.  Our meals were lovely but I was fixated on another regret which was that I had not ordered the same dish as one of our friends – Roasted Brussel Sprouts. 

Marcona almonds, bacon, ginger, ponzu dressing and feta created a sweet and salty combination, which my readers know I love.

There were oohs and ahhs from other place settings at the table where Lamb Albondigas and Mussels & Chorizo were being tucked into. 

But the happiest of all was the birthday girl who loves pork as much as I do and after much deliberation decided upon the pork belly.  I had described it from my other tastings as being a veritable loaf of meat and even though I obviously remembered the portion incorrectly, she was overjoyed with her choice.  Perched  on top of the slowly roasted pork was a Serano wrapped prawn mousse and was accompanied by crisp chicken skin and  parsnip puree.  The tastes were complemented by both romesco sauce and sherry syrup.  At one point I heard her declare that it was the best meal that she had ever had at any restaurant (and this from a world traveller).  High praise, indeed.

A couple of after dinner liquers  and desserts were enjoyed.  In the mean time, gifts were shared as well as the tales of future Christmas adventures.  The love amongst us was evident and it was a memorable way to celebrate the many of life’s blessings together.
