My projects as a food stylist are satisfying work-imagine being paid to grocery shop and spend part of the day in the kitchen. I don’t even mind the early mornings (once I get myself going, that is).   I get to meet fascinating people like other foodies, home economists, dieticians, cookbook authors and chefs.  My favourite Chef thus far has been the pleasure of working with Chef Michael Allemeir.  I knew that his recipes would be stellar and written with care.

Here’s his impressive bio:

Born in Johannesburg, South Africa, Chef Michael Allemeier moved with his family to Hong Kong where he was smitten by the culinary bug at age 12.

He started his first official kitchen job at the St. Boniface Golf Club. He apprenticed with Delta Hotels and the St. Charles Country Club in Winnipeg. He has worked at the acclaimed restaurant Amici in Winnipeg; Executive Chef of Bishop’s Restaurant in Vancouver; Fairmont Hotels in the Wildflower Restaurant in Whistler; and Executive Chef of Teatro Restaurant in Calgary, where he won numerous awards.

In 2003, Chef Allemeier’s passion for food and wine pairing was realised with the call to Mission Hill Family Estate Winery in the Okanagan Valley, where he launched the Terrace Restaurant, created a culinary school, private dining program, retail line of preserves, designed and built Canada’s first Varietal Kitchen Garden and many other initiatives for sales and marketing.

A Certified Chef de Cuisine (CCC), which is Canada’s second highest professional culinary accreditation designation. Chef Allemeier is also a member of the international food and wine organization the Chaîne des Rôtisseurs.

He is currently pursuing his career-long passion as an educator. In 2009, he started as a culinary instructor at SAIT (Southern Alberta Institute of Technology). Currently, Chef Allemeier is a CMC (Certified Master Chef) candidate, which is Canada’s highest professional accreditation.

Chef Michael is a 1989 Red River College graduate and tells me of his fond memories working with Chef Tony of the St. Charles and Heinz Kattenfeld of Amici!

I prepared two fabulous recipes for Chef Michael’s appearance yesterday on Breakfast Television.  With permission, I am sharing this fabulous salad.

"Waldorf" Berry Salad

An exciting twist on a classic summer salad. Celery, toasted walnuts, apples, mixed berries, all tossed in a creamy dressing - using half and half cream, sour cream and Greek yogurt.
Ingredients
  • ¼ cup (60 mL) 10% half-and-half cream
  • 3 tbsp (45 mL) sour cream
  • 3 tbsp (45 mL) Greek yogurt
  • 1 tbsp (15 mL) fresh lemon juice
  • 1-½ cups (375 mL) diced celery
  • 1 cup (250 mL) toasted walnuts, lightly crushed, divided
  • 1 red delicious apple, cored, quartered and diced (skin on)
  • 1-2/3 cups (400 mL) assorted berries (such as blueberries, blackberries, raspberries, or quartered strawberries, if large)
  • Salt and black pepper
  • 8 to 10 whole butter lettuce leaves
  • 10 to 12 celery leaves
Instructions
  1. In a large bowl, stir together cream, sour cream, yogurt, and lemon juice. Stir in celery, ¾ cup (175 mL) of the walnuts and apples. Gently fold in berries. Season to taste with salt and pepper.
  2. In a bowl or on a serving platter, arrange lettuce leaves and gently spoon salad on top. Garnish with remaining walnuts and celery leaves.

I sometimes take the left-overs from a TV appearance home with me for my family to taste but this one was whisked away by the staff on the TV set-it was that good!  After they got tastes of the second recipe “Berry Delicious Potato Salad” I packed up the rest for supper at the Beach House tonight.  A whole chicken with lemon and fresh sage leaves is in the crockpot and I am hoping that D will stop on the highway and pick up some corn.  Ah summer time…..

“Go Barley” Go!

In the spirit of the World Cup, I am inspired to write this blog post headline…..

I am fascinated by ancient foods especially those referred to in the Bible.  Add barley to that list as it is mentioned over 30 times-in fact there is archeological evidence that wild forms of barley were being harvested as early as 17,000 BCE!

In my recent efforts to increase my soluble fibre, I have been seeking out recipes for whole grains like barley.  In addition to reducing the risk of heart disease, barley helps improves glycemic control and the soluble fibre helps with digestive health.  Barley is also a super food when it comes to vitamins and minerals, containing thiamine, niacin, folate, riboflavin, iron, calcium, potassium, phosphorus, magnesium, manganese, zinc, selenium, B vitamins and amino acids!  I feel better, just having typed this long list….

Barley is a local food and I love to see fields of graceful, long blonde haired stems, blowing in the farmer’s fields throughout Manitoba and the rest of the Canadian prairies.

But the truth is, no nutritional food is worth knowing about if it doesn’t taste good.  I love barley’s unique nutty flavour.  In my enjoyable work as a food-stylist, I sometimes am recruited when a new recipe book is being launched.  Such is the case, with a gorgeous new book entitled “go barley-MODERN RECIPES FOR AN ANCIENT GRAIN” by Pat Inglis and Linda Whitworth.

Linda and I have worked together before and she is a delight to work alongside and is the “Barley Queen” as far as her knowledge of the grain is concerned.

The book itself is a perfect size and is packed with gorgeous photography that make you want to pick up a spoon or fork and break through the pages.  This is what ingenious recipe writing (and a good food stylist) can achieve. My favourite of the three recipes: Wild Rice, Barley, and Fruit Salad; Raspberry Rhubarb Cobbler and Barley Tabbouleh, is the latter.

I left it for D’s dinner last evening with a grilled chicken breast and just now I crumbled some feta on top for a refreshing (from fresh mint) and yet satisfying lunch.

D with his sweet tooth, loved the Cobbler and I am planning on making the Ole Fashioned Ginger Snaps for him and the Sunflower Barley Crackers for me.

With Linda’s permission, here is the Barley Tabbouleh recipe, just to whet your appetite until you get a chance to buy the book or check out their website: Go Barley.

Barley Tabbouleh

Serves: 6-8
 
Garnish this Middle eastern dish with mint leaves and serve it icy cold as a salad or as an appetizer with crisp bread. Add the tomatoes just before serving to keep their firm texture and taste.
Ingredients
  • 1 c pot or pearl barley
  • 2 c water
  • 1 c chopped fresh parsley
  • ½ c chopped fresh mint
  • ½ c chopped green or red onion (I used red)
  • 1 small cucumber, coarsely chopped
  • ¼ c olive oil
  • ¼ c fresh lemon juice
  • ½ t cinnamon
  • ¾ t salt
  • freshly ground pepper, to taste
  • 3 plum tomatoes, chopped (I used Roma)
  • fresh mint leaves for garnish
Instructions
  1. In a saucepan over high heat, combine barley and water; bring to a boil.
  2. Reduce heat to simmer; cover pan and cook for 40 minutes, then chill.
  3. In a large bowl, combine chilled barley, parsley and mint.
  4. Add onion and cucumber.
  5. In a small bowl, whisk together olive oil, lemon juice , cinnamon, salt, and pepper; pour over barley mixture and mix well, then refrigerate.
  6. Shortly before serving, stir in tomatoes.
  7. Garnish with fresh mint leaves.

Clif Mojo Trail Mix Bars

I am forever on the look out for a “granola” or snack bar that tastes like it was made in my own kitchen and the first ingredient is not sugar.  I was recently sent samples of a bar that is just the ticket.  No wonder it tastes homemade- the idea was born during a Clif Bar & Company employee campout in the Sierra Nevada.  The founder of Clif Bars-Cliff Erickson pulled out a cookie sheet with a snack that he had baked.  Much tinkering and testing later, a sweet and salty line of trail mix bars was invented.  My readers know that sweet and salty is my favourite combination, especially when it is made with primarily (70%) organic ingredients like nuts, delicious fruit and huge chunks of dark chocolate.

The three samples that I was sent were Coconut Almond Peanut, Dark Chocolate Cherry Almond (I am passing this one along to D who loves chocolate and cherry pairings) and Dark Chocolate Almond Sea Salt which I just now enjoyed.  I had time for only a nibble for lunch (a piece of unsalted ham rolled around a wedge of old cheddar cheese) as I am getting ready for a food styling gig later this week.  In my mind, I could more than justify the 200 calories and a little bit of sweetness (from organic tapioca syrup).

The little bar was rich and satisfying and it is bound to hold me as I run errands and get my groceries purchased for food styling.  I hate shopping with an empty tummy as I typically make unhealthy and impulsive purchases when I do.  The Real Canadian Superstore sells the product so I can fuel up in the future without being tempted by chocolate bars.

PS I tried the Coconut Almond Peanut Bar the next day and LOVED it.  Chock full of both almonds and peanuts, the coconut completed the nutty taste trio.  This will be my fav snack from here on in.

How to Cook and Eat Live Lobster

When you think about dropping a living thing into boiling water to cook it and then break its body apart and eat it, the very thought could easily dissuade you.  Even though Diane Keaton playing Annie Hall in the film clip above, indicates that she could never do so, neurotic and paranoid Woody Allen playing Alfie manages to.  I have never been the instigator of this action in our home but I love that D is willing to take it on, as the rewards are so delicious!

Select your lobster according to desired size and also look for a intense colour and frisk movement.

For the sake of the crustacean, bring large pots of water with a tight fitting lid. As soon as the shellfish has changed to a bright red colour, it is done.  Take a peak in the pot at about 7-8 minutes.

As soon as it is cooked, plunge into cold running water.

Twist off the tail and then with a pointed and heavy knife, make an incision down the middle of the tail.  The meat can be lifted out of the tail and placed on top of the skeleton if desired.

Likewise, twist off the claws. With a heavy cleaver, whack the cleaver into the broadest area of the claw.

In this case, D completely split the tail into two so that the meat could be easily lifted out.

The claw is my favourite source of the sweet flesh.  I also love to suck the meat out of the lobster’s legs but D could not be bothered.  Either nugget of meat, dipped into some drawn butter, with a squeeze of lemon is a taste like no other!

Food Revolution Day & Sobey’s Potluck Challenge-Our Tastes from Home Dinner

We were delighted to host a potluck in conjunction with Sobey’s Potluck Challenge.  When we invite this particular group of friends over, I am not sure who is the most excited: the parents because they get a breather from their kids (we take the kids off their hands for the evening) or the kids who are anxious to see each other and head down to our play area in the family room.

But we always start the evening off with a family dinner.  The contributions to our “Tastes from Home” potluck were homemade chicken noodle soup, green bean casserole (a classic modified to be made without cream of mushroom soup) to accompany the macaroni and cheese that I had prepared,

a make-it-yourself spinach salad and watermelon and brownies for dessert.  The hit in the dining room where D, myself and Sister #3 were supervising the little ones was the chicken noodle soup.  The noodles were lovely and fine and the broth had a hint of what we guessed was fennel in it.  We couldn’t confirm because the home cook that contributed it had to attend another event, but she sent a stock pot full of soup over with her husband and girls. We grown ups in the room loved the green beans and the spinach salad.

My contribution of Mac and Cheese was modified from an old family favourite.  We have been preparing Best of Bridge’s Gourmet Macaroni and Cheese for years.  But recently, we had been saving the dish for special occasions because it was anything but low fat and low calorie.  I performed a test run of the recipe for Daughter #2’s birthday dinner.  When the original recipe and my version were tasted side by side, no one could tell the difference.

Gourmet Mac and Cheese, Healthied Up

Ingredients
  • canola spray oil
  • 2½ c fibre enriched elbow macaroni
  • ¼ c canola
  • ¼ c whole wheat flour
  • 2 c 1% milk
  • ½ t salt
  • 1 T monkfruit extract, 100% natural, 0 calorie sweetener
  • 8 oz. fat reduced old cheddar cheese, grated
  • ⅔ c fat free sour cream
  • 1 1 /3 c 1% cottage cheese
  • Topping:
  • 2 c grated fat reduced old cheddar cheese
  • 1½ c breadcrumbs made from whole grain bread
  • 2 T canola oil
Instructions
  1. Prepare a 2.5 litre casserole dish by spraying with a canola spray.
  2. Cook macaroni until el dente. Drain.
  3. Blend canola oil and flour over medium heat until it begins to bubble around the edges
  4. Add milk and cook over medium heat stirring constantly until sauce thickens.
  5. Add salt and monkfruit extract. Blend pasta, sauce, cheese, sour cream and cottage cheese.
  6. Combine the topping ingredients and sprinkle on top.
  7. Bake at 350 degrees for 45 minutes.

The moist, dense brownies for dessert were perfection.  One bite could truly satisfy a chocolate yearning.

Now, who wouldn’t want to cook for these adorable kids? They are well mannered, taste everything and have sophisticated palettes for children their age. This is, I am quite sure, because of the example and encouragement of their parents.  All the parents in our circle, simply place wholesome, home prepared foods in front of their families and let the kids take it from there. Soon there will be another little guy around the table, as they have a brand new baby brother!

In the foreground are three sisters.  They all help their parents in the kitchen and one of their favourite pastimes is flipping through pages of cookbooks.  I kid you not.  When we were invited there for dinner recently, all three of them were on the floor by the cookbook shelf in the kitchen, oohing and awing over various recipe photos, sharing them with each other and then requesting of their Mom that they make the most popular items.

The Wee One (our Granddaughter) is also a part of this group.  This weekend she tried grilled eggplant for the first time!

After our successful potluck, the kids donned t-shirts which served as painting smocks and made painted terra-cotta pots for their Moms for Mother’s Day.  These children are truly blessed with amazing Moms who know that time invested in the nurturing of these little ones is their most important work.

So as far as a Food Revolution is concerned, the need is not great amongst our particular circle.  But please do not misunderstand me; we know that we are a privileged group.  We have the luxury of time and can afford a variety of wholesome ingredients to prepare for our families.  Such is not the case the world over and indeed not even throughout our own neighbourhoods and communities.  We try not to take our blessings for granted and know that our responsibility is to share our knowledge with other families by example, with hospitality and with contributions of money and time to organizations that help feed families nutritious food.

I applaud Jamie Oliver and his efforts through Food Revolution Day-a global day of action celebrating the importance of cooking good food and inspiring in children a love of healthy food that will last a lifetime.  Sobeys wanted all Canadians to get involved and show off their cooking skills and that is why they created the national potluck challenge.  I encourage you to host your own potluck but also to tweet and/or post to Instagram about your potluck event with the #PotluckChallenge hashtag.  Sobeys will be donating $1 to the Cooking Towards Independence Project-a joint initiative between Sobeys and the Children’s Aid Foundation that will set up cooking workshops with children across Canada.
